In 1989 Dan Kopman founded the St. Louis Brewery with attorney and longtime Central West End resident Tom Schlafly, who also gave his name to the brewery's beers.

In late 1991, the pair opened the Tap Room on Locust Street at the western edge of Downtown and began serving their signature Pale Ale and Hefeweisen.
